A week ago, or so, I mentioned that I had tweaked my back working on the trailer.  Some stretching, some ice followed by heat helped my resolve that problem but now Mag is experiencing similar discomfort.  She hasn’t a clue how it happened although it might have been when she opted to join a youngster in a fierce game of pickleball.  LAUGHING iPHONE EMOJI vinyl wall,car,van decal sticker | eBayShe has been following a similar regimen to alleviate the pain.  Needless to say, we’ve taken it easy this week but did manage another hike at Circle B Bar Reserve, about 4.25 miles and spotted many birds, several alligators and a couple of turtles.  We planned our Christmas dinner, shopped for whatever else we needed and cooked it Friday so, we’re all set for Monday, Christmas Day!

Saturday the temperature reached 74 degrees and we spent a couple of hours poolside and even managed a dip.  We don’t know what the water temperature is but the large pool is heated so, it was pleasurable.  Monday, we’ll be dining on Veggie Lasagna, salad and garlic bread.  For hor d’oeuvres, I picked up a mini charcuterie board (off-plan) to whet my pallet before Christmas dinner.  The veggie lasagna contains some veggies; zucchini, onions, peppers, spinach, and mushrooms, layered with marinara sauce and a “ricotta” mixture.  The ricotta mixture is made from tofu, roasted garlic hummus, ground cashews and nutritional yeast.  It’s layered as you would expect and we precooked two 8×8 pans so, it’s ready for Christmas.  One of the pans was divided into 6 portions and stored in the freezer.  The second we’ll reheat.  I have to admit, the aroma from baking gives us the sense, it’s gonna be good.  We let you know…
